Ingredients

  • 4 russet potatoes
  • 2 tbsp olive oil
  • 2 tsp salt

Instructions

  • Heat the grill into two zones (direct and indirect). If you're using a charcoal grill, this means having all the coals on one side of the grill.
  • Wash the potatoes thoroughly and dry them using paper towels.
  • Pierce the potatoes in a few places using a fork and rub them with olive oil. Sprinkle salt on them and wrap each in aluminum foil.
  • Place the potatoes on indirect heat and grill for one hour. Then place them on the direct heat and grill for 5 to 10 minutes.
  • Unwrap the potatoes and cut them in half. Fluff the inside using a fork and serve with butter, sour cream and chives.

Notes

  • Depending on the size of the potatoes, it would take between 45 minutes to one hour for them to cook.
  • The potatoes are fully cooked if a knife is inserted easily into the potato.
  • Russet potatoes work best for this recipe because of their thick skin and starchy inside.
